Whipped Cream Cake

Whipped cream cakes are cakes made with whipped heavy cream instead of butter. Some recipes include some butter but some, like Rose Levy Berenbaum's, are made fully with whipped cream. Compared to butter cakes, whipped cream cakes have a more delicate texture, are very moist and have a wonderful cream flavor. Whipped cream cakes are so good on their own, all they need is a dusting of icing sugar or a dollop of fresh cream to go with that hot cuppa when you sit by the window. Ahhh....

I've been experimenting with several recipes and have found my ultimate whipped cream recipe. The cake is extremely fine and closed-textured but utterly tender and truly melts in the mouth. I think it will be the perfect cake for me to create new cakes with. So happy.

This whipped cream cake is Rose's version. It is light, soft and delicious.

I couldn't believe it, but this whipped cream cake is even better than Rose's, agreed unanimously by 9 different tasters. Paler than Rose's but extremely fine-textured and downy, and very yummy too! Another 2 tasters said they found both versions as good. This is one of the best 'butter' cakes I've ever tasted.

Hahaha.....getting very enterprising Terri. Hope you will also include cooking in your class. Suggestion, maybe you should use a microphone when conducting the class. Can't really hear the jokes/tips the other days.

Ah! I was drooling all over my table reading your description but unfortunately I live in Selangor and can't attend your class either. Really wish I could try it! Good luck with your up and coming classes.

Terri, good for you! can not do everything for free. Wanted to learn from the lady in South Africa who can decorate the cakes so beautifully. Can not go. Is she cruel? How many people can go there?

Hi Terri - so true.. when we see anything for free we never value it.
This holds true for how we take for granted people in our lives as well (be it family and friends). I admire what you are doing and I think it is a step in the right direction. The only pity is that for some of us (not living in KK or close by) - we will not be able to enjoy your recipes as well as the knowledge you impart with your blog-posts - although for me - I read your blog religiously on a daily basis such that I can almost remember some of your recipes ;-)

You should consider publishing a book with all your favourite recipes together with some chapters on your favourite topics eg. life, kids, marriage (ie. along the same vein as your blog posts). I for one would be the first to put my name on the waiting list.

You must have received many requests to have classes in West Malaysia and really should consider it. Same as the above, I would be first to register for your classes.
Heck - I'm even contemplating taking a day off and flying to KK - to attend your Terrific Cakes classes. Unfortunately - your classes are mostly on saturdays and for a mummy of two young kids, there's no way I can travel during weekends.

Haha - yes - there are more bakers/teachers in KL but maybe not all share the same thoughts as you which I love (ie. the insistence of baking "real" cakes without additions).
Still love your blog nonetheless....
